Ingredients

  • 600 g fish fillets or cleaned whole fish
  • 1 tablespoon lemon juice
  • 1 tablespoon oil, plus more for frying
  • 2 1/2 teaspoons King's Fish Masala
  • 1/2 teaspoon King's Curry Powder
  • 1 clove garlic, crushed
  • Salt to taste
  • 2 tablespoons rice flour or maize flour for a light crust

Steps

  1. 1

Mix lemon juice, oil, garlic, King's Fish Masala, King's Curry Powder, and salt into a thick paste.

  2. 2

Score whole fish lightly or pat fillets dry. Rub the paste over the fish and into the cuts, then rest for 10-15 minutes.

  3. 3

Dust lightly with rice flour or maize flour. Shake off the excess so the crust stays thin.

  4. 4

Heat a shallow layer of oil over medium heat. Fry until browned on one side, then turn once and cook through.

  5. 5

Drain briefly, season with a final pinch of salt if needed, and serve hot with lemon wedges.
