Fish Masala Fry
A quick fish fry with lemon, garlic, King's Fish Masala, and a light crust for crisp edges.

Ingredients
- 600 g fish fillets or cleaned whole fish
- 1 tablespoon lemon juice
- 1 tablespoon oil, plus more for frying
- 2 1/2 teaspoons King's Fish Masala
- 1/2 teaspoon King's Curry Powder
- 1 clove garlic, crushed
- Salt to taste
- 2 tablespoons rice flour or maize flour for a light crust

Mix lemon juice, oil, garlic, King's Fish Masala, King's Curry Powder, and salt into a thick paste.

Score whole fish lightly or pat fillets dry. Rub the paste over the fish and into the cuts, then rest for 10-15 minutes.

Dust lightly with rice flour or maize flour. Shake off the excess so the crust stays thin.

Heat a shallow layer of oil over medium heat. Fry until browned on one side, then turn once and cook through.

Drain briefly, season with a final pinch of salt if needed, and serve hot with lemon wedges.
